These are certified New Mexico chiles are prepared in the Hot Winter style - fermented with organic chesnok red garlic from Camas Swale Farm, before being blended and bottled by hand. The Big Jim Hatch variety creates a sauce with an accessible heat and distinctive Southwest flavor.
